Bread Machine – Blueberry Bread

With the arrival of blueberry season, intrepid blueberry pickers may find themselves with more blueberries than they know what to do with!  A quick and simple blueberry bread recipe is not only the ideal method for using extra blueberries but it also makes a great addition to a Sunday brunch or even a family picnic.  This blueberry bread recipe yields a deliciously moist loaf that is sure to please even the pickiest of eaters!

Ingredients you will need: 1-1/2 Pound loaf
2 1/3 cup bread flour                                        2 tbsp sugar                       241/365: Blueberry Banana Bread
1 tsp of salt                                                       1 tbsp vegetable oil
½ cup blueberries                                             1 tsp baking soda
1 cup buttermilk                                                1 ½ tsp active dry yeast

Optional - Chopped walnuts – 1/3 cup

1. Sift all of your dry ingredients until well blended
2. Place your dry ingredients into your bread machine’s bread pan.

4. Select the White Bread setting on your bread machine.
6. Allow the blueberry loaf to cool on wire rack.

- This bread freezes well for up to two weeks!
- To add to the flavor of the blueberries, add a teaspoon of lemon extract. Sprinkle lemon zest on the top of your blueberry bread as an attractive and flavorful addition!

    Fully developed dough has a dry, silky appearance. It stretches into a thin, smooth film without breaking or tearing, yet it still retains some ability to spring back. A great test used by bakers… pull off a piece of dough about one inch. Roll it between your hands to shape into a ball then pull the dough, stretch it apart in your hands. Rotate and pull the dough in all directions forming a thin sheet. Completely formed dough should form a thin film without tearing.

    Also remember, bread machines require a slightly softer dough than handmade recipes. You may need to add a little more liquid. Hard to say without seeing it though. If the dough is crumbly or the machine is working hard add a little water. If it sticks to the sides of the pan and doesn’t form a good ball then add a little flour.

    How should dough ball appear? I tried recipie twice changing yeast, flour content, sugar and salt content with same results. The loaf fell during baking cycle.
