Bread Machine Flour Substitutions Pt2

This article is the second part to an initial post on Bread machine flour.  With so many different types of flours available for baking, we thought that  this two part guide on flour might come in handy.

Unbleached Flour: As the name suggests, unbleached flour has no bleaching Bread for #uxcamplondon 1.5
ingredients.  Although it can be used for baking bread, if given a choice, stick with bread flour.

Self Rising Flour: This this flour is an all purpose flour plus salt and the leavening.  Due to the fact that the leavening has been added already it is not recommended for use in a bread making machine.

Whole Wheat Flour: Made with the entire wheat kernal, the endosperm, germ and bran, this flour should be stored in the refrigerator.  Prior to its use, it should be allowed to warm to room temperature.

Wheat Blend Bread Flour: This flour produces great loaves, higher in volume and texture than those made with whole wheat flour.  It can be substituted for all purpose flour, bread flour  or whole wheat flour on a one to one basis.

Cake Flour: Low in gluten , cake flour is milled using soft wheat.  It is great for baking biscuits, fine textured cakes and pastries.  It should not be used to bake bread as it does not have enough gluten.
