Bread Machine Flour Substitutions

Bread machine flour is the primary ingredient, by quantity, in bread making. Flour is mixed with liquids and then kneaded. There are several flours/flour blends that you might want to try when experimenting with your bread machine.

All purpose flour: This flour is a blend of soft and hard wheats. It is suitable for most types of baking. Although it can be used when baking bread, you are better off using bread flour in your bread making machine. You will find small amounts of bleach in this flour.

Bread flour: Bread flour is a unbleached type of flour. It is made from a blend of hard wheats high in protein. Bread flour absorbs more water than other flours and is more elastic. Bread Flour is great in bread machines. It produces well formed loaves high in gluten.

Organic flour: A great flour that does not contain bromates, bleaches or any other additives. Organic flour can be used with bread making machines recipes. Usually the use of term organic means that your wheat has been grown flour
with natural fertilizers.

Quick mixing flour: A unique all purpose flour: its texture is granular and it is dust free. Quick missing flour dissolves quickly in cold liquids. It is not recommended for use in bread making machine recipes as it sometimes absorbs too much liquid.

Rye flour: Low in gluten proteins rye flour is milled from rye grains. Although it is low in gluten, it is usually combined with wheat flour in bread making machine recipes increasing its gluten forming potentials.
