Bread Machine – Yeast Free Bread
Yeast free bread is also known as “Quick Bread.” It is bread leavened with products other than yeast. Baking powder and baking soda are the two ingredients normally used that, when combined with the other ingredients in a recipe, causes bread to rise in a fashion similar to yeast.
While it is true that bread (yeast free bread) made using other self-rising methods have a less complex flavor than those that use yeast,
it is still possible to create light and fluffy textures by using well-beaten eggs. The flavors of yeast free breads are less complex simply because your dough does not ferment during the rising process.
A typical quick bread recipe, like banana or zucchini bread, will contain flour, salt, vegetable oil and even various types of fruits and vegetables. Quick breads can be either very dense, like banana breads, or they can be very light and fluffy like pancakes or muffins.
Yeast free bread do not require the extensive rising times similar to those of their yeast counterparts. In some ways this is great because a recipe can be completed very quickly and dependably. Once a novice baker has taken the time to get familiarized with their bread making machine and the breads that do not require the use of yeast, he should be able to gradually expand on the basic recipes creating bread that is both unique and tasty!
