Depending on what bread making machine you decide to purchase, you should enjoy a wonderful selection of bread cycles.  Bread machine cycles makes bread making easy and convenient.  Although they all come with basic cycles I thought it might be fun just to talk about a few.

Basic Cycle - During this cycle your bread dough is kneaded twice prior to baking.  This is usually where you choose your favorite breads crust color.  The colors are usually something like medium, light and dark. For those of us that Tuna Salad on Whole Grain Bread - bread making machine
prefer a thicker crust, we will probably select the dark color setting.  You will find that most breads are baked at the medium setting.

Whole Wheat/Whole Grain Cycle - If your recipe has a good amount of rye flour, bran, oats or whole wheat; this is the setting for you.  In general you will note that this cycle has a longer rising time to allow for the expansion of the heavier grains.  This cycle and the resulting breads tend to be denser that the basic cycle mentioned above.         Creative Commons License photo credit: Vagabond Shutterbug

Dough Cycle - This cycle is great if you are making pizza.  Your dough is kneaded not once but twice and allowed to rise.  In many machines, this cycle does not have a feature which keeps the dough warm as you will be removing it right away to shape your pizza.

French Cycle - Also known as the crisp cycle, it is designed to create a crisp outer shell and a soft inner core.  This cycle generally kneads the bread twice, allows the bread to rise twice, shapes and bakes.
