Olive Oil Grades

Many breads, especially country breads, use olive oil instead of butter.  Olive oil has a wonderful taste and is used is all types of baking.  You will find it in quick breads, yeast breads and flat breads.  The following is a list that covers a few of the grades associated with olive oil:

Extra virgin olive oil -  cold pressed (no chemicals, no heat), this oil is extracted using circular stones.  You olive oil - bread making machines
can also find virgin and fine virgin oils within this category.

Pure olive oil -  Less expensive than the extra virgin oil, it is obtained via the blending of several types of olives.  Some heat and some chemicals are used in the process.   It is also worth noting that this oil is the result of an extraction that takes place after the extra virgin oil process has been completed.

Lite Olive oil -  Named lite not due to the number of calories but due to the color.  This Olive oil has just a touch of extra virgin olive oil blended in.
