Quick bread, have you ever wondered what it was?  An American term, quick bread may be thought of as any bread made Chocolate Chip Quick Breadwith leaveners such baking soda or baking powder instead of yeast.  Unlike breads containing yeast, quick breads require no kneading, proofing or rising time.

Most quick breads contain five basic ingredients: flour, baking powder/baking soda, eggs, butter/shortening/oil, and milk.

There are essentially three methods when it comes to making quick breads.

The first is called the quick bread, blending or the muffin method.   Dry and wet ingredients are measured and then quickly mixed. The second method, the creaming method is so named due to the fact that the butter and sugar is blended until the mixture becomes creamy.  The eggs and flavoring are mixed in next, finally the flour, baking powder/soda and milk.

The third method, the shortening or biscuit method is used for biscuits and pie crusts.  A food processor is used to cut chilled fat creating dry ingredients.
