Sunflower Pumpernickel Bread

Pumpernickel bread in North America is usually made using cocoa, coffee and molasses which helps to mimic the dark color of traditional German pumpernickel rye.  Also worth noting is the fact that in North American, wheat flour is added to your ingredients.

Ingredients you will need: pumpernickel dough - bread making machines
2 cups bread flour
1 1/3 rye flour
2/3 cup whole wheat flour
1 2/3 cups water
4 ½ tbsps molasses
3 tbsp butter
1/3 cup cornmeal
¼ cocoa powder
2 tbsp gluten

2 tbsp nonfat dry milk
¾ tsp espresso powder
½ cup sunflower seeds
1 tbsp caraway seeds
2 tsp salt
1 tbsp yeast

1.  Add all ingredients (except sunflower seeds) into bread pan.
2.  Check your bread making machines manual for best mixing order.
3.  Set crust on the basic cycle for baking. Add Sunflowers during 1st and 2nd knead.
4.  Once baking cycle has finished, remove from bread making machine and allow to cool.
