Sweeteners and Your Bread Recipe

Sweeteners, which includes molasses, honey and of course sugar, are used in your bread recipes to help provide food for the yeast to grow.  Sweeteners also helps your bread's crust brown while adding flavor.

Some people simply substitute what ever sweetener is available when baking. In most cases this will work however we should keep in mind that not every sweetener dissolves at the same rate.  This could potentially affect your yeast.

The natural sugars found in fruits and vegetables are also great ways of adding flavor to your bread. Keep in mind thatSugar crystals
too much sugar may affect the development of gluten in your bread, causing it to collapse. When there is too much sugar you may also note that the growth of your yeast is inhibited.

When fruits and vegetables are used in recipes just note, you may need to increase the amount of yeast in your recipe.

Artificial sweeteners are o.k. but when it comes to baking bread,  your yeast must be fed properly.  Artificial sweeteners don't  adequately feed the yeast in most cases.                                                                         Creative Commons License photo credit: aleksands
